Tomato Salsa

This recipe makes a cooked tomato salsa that is similar to the salsa you can buy in a jar.


Ingredients


1 onion

½ capsicum

1 long red Thai chilli*

2 cloves garlic, crushed

1 ½ tsp ground cumin

400g can chopped tomatoes

¼-½ cup fresh coriander, chopped

1 tablespoon lime or lemon juice

1 tablespoon apple cider vinegar

½ cup (140g tub) tomato paste

3 tsp raw sugar

1 tsp salt


*Use half a red chilli to make it mild and suitable for kids


Instructions

  1. Finely dice the onion and capsicum. Deseed the chilli and chop very finely (I wear gloves to do this).

  2. Sauté the onion and chilli in a medium pan over low-medium heat for 5 minutes. Add a splash of water if the vegetables start to stick.

  3. Add remaining ingredients and bring to a boil. Put a lid on the pan, reduce heat and simmer for 10 minutes.

  4. Taste and adjust seasonings - add a little more salt, sugar or vinegar to suit taste.


Thermomix Instructions

  1. Place the onion, capsicum, chilli, garlic and coriander into Thermomix bowl and chop 3 seconds/speed 5.

  2. Scrape down sides. Add the remaining ingredients and place the simmering basket on top of the Thermomix. Cook 30 minutes/90C/reverse speed 1.
