Instant Pot Brown Rice and Black Bean Stew

This is a really easy one-pot rice and beans meal that you can set and forget in the Instant Pot. It's the perfect meal for busy week nights. This is really good served with some avocado and salsa on top.

Ingredients


Serves 4-6


1 large brown or red onion

2 tsp crushed garlic

2 sticks celery

2 large carrots

400g can chopped tomatoes (or chopped fresh tomatoes)

400g can (3 cups cooked) black beans or red kidney beans, drained

2 tablespoons tomato paste

4 cups water or vegetable stock

1 tablespoon chicken-style stock powder (I use Massel brand) - only if using water instead of stock

3 teaspoons ground cumin

1 teaspoon dried oregano

Salt and pepper to taste


Pressure Cooker Method

  1. Set instant pot to sauté function for 15 minutes. Sauté onion and garlic in ¼ cup water for 5-10 minutes while you prepare the remaining vegetables. Add the carrot and celery as they are cut.

  2. Cancel saute function.

  3. Add remaining ingredients and stir well. Set the lid in place. Set the instant pot to pressure cook function. Set the timer for 22 minutes.

  4. At the end of cooking, allow the pressure to drop naturally for 15 minutes (or longer if you're not home), then release remaining pressure manually.

  5. Stir gently and serve. I like to serve this topped with avocado and salsa, with chopped fresh tomato, cucumber and red onion on the side.
