These muffins are wheat free, vegan and oil free. They’re sweetened with dates, so they are also refined sugar free. I’ve kept them nut-free so you can put them in your kids’ lunch boxes.

Ingredients
1 cup (160g) dried dates
3/4 cup boiling water
1 cup (100g) rolled oats
2 tablespoons (20g) cocoa
2 teaspoons vanilla
3 teaspoons baking powder
1/4 cup soy milk
1/2 cup chopped dairy free dark chocolate (or chocolate chips)
Method
Preheat the oven to 180C (350F). Line 8 half-cup muffin tins with oil (or use silicone muffin tins, which don’t require greasing).
Soak the dates in the boiling water for 10 minutes to soften.
Place the oats into a food processor or blender and blend until very fine.
Place the oats into a mixing bowl and add the baking powder and cocoa. Mix thoroughly.
Place the dates and their soaking water into the food processor/blender and add the soy milk and vanilla. Blend until completely smooth.
Add the date mixture to the oat mixture along and fold in until just incorporated.
Add the chopped dark chocolate (or chocolate chips) and fold until combined.
Divide the mixture amongst the 8 muffin tins.
Place in the oven and bake for 25-30 minutes, or until cooked through.Cool for 10 minutes before removing from the pan.
Thermomix Instructions

Place the oats into the Thermomix bowl and blend 20 seconds/speed 10.
Add the cocoa and baking powder to the Thermomix bowl and mix 5 seconds/speed 5. Place the oat mixture into a mixing bowl.
Place the dates and their soaking water into the Thermomix bowl and add the soy milk and vanilla. Blend 30 seconds/speed 10
Add the date mixture to the oat mixture along and fold in until just incorporated. Add the chopped dark chocolate (or chocolate chips) and fold until combined.
Divide the mixture amongst the 8 muffin tins.
Place in the oven and bake for 25-30 minutes, or until cooked through.Cool for 10 minutes before removing from the pan.
