These banana blueberry muffins are vegan, oil free, wholegrain, refined sugar free and wheat free. They are sweetened with dates and are nut free, so they're perfect for kids’ lunch boxes.

Ingredients
1 cup dried dates
¾ cup (190ml) hot water
2 ½ cups (250g) rolled oats
3 large very ripe bananas (1 ½ cups/375g mashed)
¼ cup (60ml) soy milk
1 tablespoon vanilla
3 teaspoons baking powder
1 teaspoon bi-carb soda
1 cup frozen blueberries
Method
Place the dates in a bowl and cover with the hot water. Stand for 10 minutes to soften.
Lightly grease 18 half-cup muffin holes (or use a silicone muffin pan). Pre-heat oven to 165°C.
Place the rolled oats into a blender or food processor and blend until finely ground into flour. Place in a large mixing bowl and add the baking powder and bi-carb soda. Mix well.
Place the dates, their soaking water, bananas, soy milk and vanilla into a food processor or blender and blend until completely smooth.
Add the banana mixture to the oat mixture and fold until combined. Fold in the blueberries until evenly distributed.
Divide the mixture amongst the muffin tins.
Bake in the preheated oven for about 20-25 minutes, or until cooked through and starting to brown on top.
Thermomix Instructions

Notes You use 1/2 cup dairy free dark chocolate chips in place of the blueberries to make chocolate chip banana muffins.
